GREEN BEAN TART:
INGREDIENTS: (serves 8-12)
2 tbsp extra-virgin olive oil
1 onion, sliced
1 garlic clove, chopped
675 g green beans, blanched, chopped into 3-cm pieces
Salt, to taste
For egg base
5 eggs
100 g parmigiano-Reggiano, grated
50 ml milk
1/4 tsp salt
Freshly ground pepper
1 cup ciabatta breadcrumbs
METHOD:
- Heat olive oil in saucepan. Add onion and cook for 1 minute. Stir in garlic and cook until onion is caramelised.
- Remove from heat, cool slightly, toss with green beans, and season.
- Whisk together eggs, parmigiano-Reggiano, milk, salt and pepper. Stir egg base in with beans and onion mixture.
- Line a springform pan with foil. Grease the foil. Pour bean mixture into pan and sprinkle over breadcrumbs. Bake in a preheated oven at 180C until set.
- Remove and cool tart, then serve in slices.
