SPICY LENTILS

SPICY  LENTILS:
INGREDIENTS:

45  ml  olive oil
30  g  butter
1   large onion, chopped
3  garlic cloves, crushed
1   red pepper, cut into blocks
30  g  mild curry powder
10  g  cumin seed
5    g  turmeric
500  g  brown lentils, washed
1  litre vegetable stock
2  bay leaves
Salt and freshly ground black pepper for taste

METHOD:
  • Heat oil and butter in a saucepan.  Add onions and stir -fry over a mild heat until the onions are soft and coloured to a golden brown.
  • Add garlic and red pepper and stir through.  Add curry powder, cumin seeds and turmeric and stir through until well mixed with the other ingredients.
  • Add lentils, followed by vegetable stock. Bring to boiling point and add bay leaves. Lower heat.
  • Replace lid and leave to simmer until lentils are cooked.  Add salt and pepper, to taste.
Note : Remove bay leaves and serve.
