VEGETABLE STIR - FRY

VEGETABLE  STIR- FRY:
INGREDIENTS:                        (serves 6)

250  g brown rice
500  ml vegetable stock
35  ml oil
1  tbsp  each, finely chopped ginger and crushed garlic
2  leeks, sliced
40  ml  each, soy sauce and honey
1  each, red and yellow pepper, cut into strips
2  sticks celery, sliced
200  g broccoli, cut into small florets
250  g brown mushrooms, sliced
50  g peanuts, roasted

METHOD:
  • Cook the rice in vegetable stock. Drain and keep aside. Heat oil in a large frying pan or wok and fry ginger and garlic for a minute.
  • Add leek, soy sauce and honey and stir-fry for a minute. Add remaining vegetables, except mushroom, and stir -fry for 5 minutes.
  • Add mushrooms and drained rice and stir-fry until mushrooms are tender. Sprinkle with peanuts, season to taste and serve.
