BRAISED SPINACH

BRAISED  SPINACH:
INGREDIENTS:                          (serves 4 )

2  tsp  olive oil
2   shallots, finely chopped
4  garlic cloves, minced
500  g fresh spinach, stems removed, leaves rinsed
2  tbsp  lemon juice
Salt and pepper, to taste
4  tsp  pine nuts, toasted

METHOD:
  • Heat olive oil in a Dutch oven and saute shallots and garlic for 2-3 minutes, until shallots are tender, stirring frequently.
  • Now add the wet spinach leaves to the Dutch oven. Drizzle lemon juice over and season with salt and pepper to taste.
  • Cover and cook spinach for 10 minutes, stirring occasionally.
  • Arrange on a platter, sprinkle with toasted pine nuts and serve hot.
