ROASTED VEGETABLES WITH TOFU

ROASTED  VEGETABLES  WITH  TOFU:
INGREDIENTS:           (serves 2 )

200  g Tofu, cubed
1  small red onion, peeled and sliced lengthwise
1  red pepper, cut into large chunks
1  courgette, cut into 1 cm slices
2  baby aubergines, cut in half
1  small carrot, peeled and cut into thin strips
2  tbsp  olive oil
Fresh thyme, a few sprigs
Salt and black pepper, to taste

METHOD:
  • Place the tofu and vegetables in a large roasting tin and drizzle over the olive oil.
  • Add the thyme and season well. In a preheated oven at 200C roast vegetables and tofu for 35-40 minutes or until the vegetables are just browning at the edges and are tender. Serve hot.
