SPINACH WITH OKRA

SPINACH  WITH  OKRA:
INGREDIENTS:

200  g okra,cut into 1" pieces
1  cup chopped spinach
1/2  tsp  cumin seeds
3  tsp  oil
1  tsp  ghee
4  green chillies, slit
1/2  tsp  turmeric powder
Salt, to taste
2  tsp  lemon juice
1/2  tsp  mustard seeds

METHOD:
  • Cook spinach with salt and a pinch of turmeric on a slow fire till it is soft and dried. Keep aside.
  • Heat oil in a wok and splutter mustard seeds. Saute green chillies, okra, turmeric powder and salt till okra is soft.
  • Add cooked spinach and saute for 2 minutes. Heat ghee in a frying pan and splutter cumin seeds in it and drizzle over the cooked vegetable.
  • Finally, drizzle lemon juice and serve.
Notes:  Serve with chapattis.
