AVOCADO TERRINE

AVOCADO  TERRINE:
INGREDIENTS:           ( serves 4)

500  g cauliflower florets, boiled
2  avocado, seeded and sliced
1  bunch coriander leaves, chopped
Juice of  1  lemon
Salt and pepper, to taste
Cherry tomatoes and lettuce, for garnishing

METHOD:
  • Mix cauliflower, lemon juice and coriander and keep aside.
  • Arrange avocado slices on the inside of a thimble and fill it with cauliflower.
  • Press the cauliflower firmly and refrigerate to chill and set overnight.
  • place it on a plate and garnish with lettuce and cherry tomatoes.
